Salad of Green Bean with Cheese

Ingredients

500 grams green beans, ¼ cup chopped walnuts, optional toast, 2 to 3 tablespoons dried cranberries, ¼ purple onion, thin fillet, ¼ cup or 50 grams blue cheese, crumbled, 2 tablespoons olive oil, 1 teaspoon walnut vinegar, white wine or apple, ½ teaspoon Dijon mustard, ½ teaspoon salt, ¼ teaspoon black pepper.

Cut the tips or edges of the green beans with a knife.

 

Boil water in a pot. Once it is boiling add salt and green beans. Let cook until soft but still firm, about 3 to 4 minutes.

Cool under cold running water or in a bowl of ice water.

Let them dry in a colander or dry well using a cloth or paper towels.

Mix the ingredients of the vinaigrette in a bowl until well incorporated. Add the onion, green beans and mix well.

 

Serve the green beans on a plate, arrange them all straight so they look nice and orderly. Cover with the walnut, blueberries and blue cheese, if you want more or less of an ingredient modify to your liking, you can also change the blue cheese for goat cheese, Cotija, feta or even omit it completely.
