Lasagna by Zucchini

Ingredients
4 Zucchini sliced along, 2 red peppers cut into strips, 10 sliced mushrooms, 2 pounds of grated mozzarella cheese, 1 onion cut in julienne, 1 can of peeled tomatoes, 1 tablespoon of oregano, 1 grated carrot, salt and pepper, olive oil.
We make a sauce with the crushed tomatoes, carrot, salt, pepper and oregano, and reserve.
In a pan with a drizzle of olive oil, sauté onion, and when transparent, add the mushrooms and peppers.
In a pyrex pour a little of the sauce and we are placing a layer of zucchini to cover the bottom.
Then we add our mixture of peppers, onions and mushrooms.
Sprinkle with mozzarella cheese and put another layer of sauce, and so we are doing until finished in cheese.
We take the oven to a temperature of 180ºC for about 20 minutes and serve.
